Here’s a recipe that couldn’t be any easier. This one is kid-approved as well. 😉
Ranch Cheddar Chicken
1/2 cup Ranch dressing
1 T. flour
3-4 boneless, skinless chicken breasts, flattened
Mix dressing and flour together.
Coat chicken breasts with the mixture.
Arrange on baking dish.
Combine 1/4 cup grated Parmesan cheese with 1/4 cup shredded cheddar cheese.
Sprinkle over chicken.
Bake @ 350 for 25-30 min.
You can make your own ranch dressing by adding a packet of ranch dressing mix to mayonnaise or sour cream and mixing in a little milk. Directions are on the dressing mix packet. (A low-fat option would be to use plain non-fat yogurt instead of mayo or sour cream.)
