Simple Ham and Potato Dinner


Do you still have ham in your freezer from Easter dinner? And did you save the broth too? Then you’re all set to put together this simple, delicious meal. This is yet another childhood favorite of mine.

2 cups of ham broth
6 medium potatoes, peeled and cut into chunks
1 lb. frozen green beans
3 cups of cooked, diced ham
1/2 c. chopped onion

Simmer everything together in a kettle until the potatoes are tender, about 25 min.

This is a very flexible recipe; the amounts can easily be changed to suit your taste. The secret to the yum factor in this dish, though, is the ham broth. Use undiluted ham broth for the absolute best flavor.

My kids response to this dish: “Mom, why don’t you make this more often?” 🙂
